Commis 1 – Pan Asian / Japanese Kitchen
Job Summary
The
Commis 1
is responsible for preparing and assisting in the execution of
Sushi, Bao, Dim Sum, and Ramen Bowls
while maintaining high standards of food quality, hygiene, and consistency. The role requires hands-on experience with Pan-Asian cooking techniques and strong discipline in kitchen operations.
Key Responsibilities
Food Preparation & Cooking
Prepare
Sushi (Veg & Non-Veg)
including rice preparation, rolling, cutting, and plating.
Assist in preparation and service of
Bao buns
(steamed buns, fillings, sauces).
Prepare and assemble
Dim Sums
(momos, gyoza, siu mai, dumplings).
Cook and assemble
Ramen Bowls
including broths, noodles, toppings, and garnishes.
Follow standardized recipes, portion control, and presentation guidelines.
Ensure consistency in taste, texture, and appearance.
Kitchen Operations
Set up and manage assigned section during service.
Maintain cleanliness and hygiene as per
FSSAI standards
.
Follow FIFO, proper storage, labeling, and temperature control.
Assist seniors during rush hours and high-volume service.
Minimize wastage and report daily consumption.
Food Safety & Hygiene
Maintain personal hygiene and clean uniform at all times.
Ensure proper handling of raw seafood, meats, and vegetables.
Clean and sanitize workstations, tools, and equipment.
Follow safety procedures for knives, steamers, and hot equipment.
Teamwork & Discipline
Work closely with CDP, Commis team, and stewards.
Follow kitchen hierarchy and instructions strictly.
Support new team members and juniors when required.
Maintain a positive attitude and team spirit.
Skills & Knowledge Required
Good knowledge of
Japanese & Pan-Asian cuisine
.
Hands-on experience in
Sushi rolling, Dim Sum folding, Bao steaming, and Ramen assembly
.
Knowledge of Asian sauces, condiments, and ingredients.
Basic knife skills and plating sense.
Ability to work under pressure and in fast-paced kitchens.
